Cucumber Sub Sandwiches
No bread required for these cucumber sub sandwiches. Instead the cucumber acts as the bread and holds all the delicious goodness inside. The beauty
of this sandwich is you can make it with your favorite luncheon meats and cheese.
This makes a great light lunch or dinner. You get protein and veggies all in one meal. Add a warm soup to start off with and then finish with a healthy
dessert.

Cucumber Sub Sandwich
These sub sandwiches can get a little slippery with all the moisture in the cucumbers. Try making these as an open face sandwich and just pick up
each half and enjoy.

Ingredients
- 4 each cucumber, large
- 8 slices turkey breast luncheon meat slices
- 8 slices roast beef luncheon meat
- 2 slices Swiss cheese, low fat
- 2 slices cheddar cheese, low fat
- 2 tbs thousand Island, fat free
Directions
- Peel skins off of cucumbers (optional)
- Cut cucumbers in half lengthwise and remove seeds.
- Scoop out part of the cucumber to make a concave.
- On each sandwich, add 2 slices of roast beef, folded in half.
- Place 2 slices of turkey luncheon meat on top of roat beef, folding in half.
- Add a 1/2 slice each of the Swiss cheese and cheddar cheese.
- Top with 1/2 tablespoon of Thousand Island dressing.
- Cut in half and serve.
